Usages

Rinse 30 to 50 g of mung beans, then place them in a saucepan with 500 ml of water.

Bring to a boil, then reduce the heat. Simmer gently for 30 to 40 minutes. After about twenty minutes, the beans will begin to split open and the preparation will gradually become creamier.

Please note: avoid boiling vigorously, as this may affect the delicate flavor of the mung beans.

Preparation tip: to help the beans split open and achieve a softer texture, you can soak them in cold water for 2 to 4 hours, or overnight, before cooking. This step is optional.

Enjoy the preparation hot, warm, or cold, together with the beans and their cooking liquid.

Warnings

Considered cooling in nature according to Chinese tradition, mung beans are mainly appreciated during periods of hot weather. Their consumption should be moderated by people who are sensitive to cold or prone to loose stools, bloating, or delicate digestion.
