The mushroom of circulation, a thousand-year tradition recovered
Known in China as "Mù ěr" (木耳), Wood Ear (Auricularia auricula-judae) is one of the mushrooms eaten longest in Asia. Its gelatinous texture and dark colour conceal a remarkable richness: it is one of the foods highest in iron.
