Xiang gu, also known as Shiitake, is a culinary and medicinal mushroom from the Far East.

Macerate a few mushrooms in 1L of lukewarm water for 30 minutes, until the mushrooms swell and soften. Discard the water and use the cooked mushrooms to prepare your dishes.
