Ingredients for 2 servings:
- Huang Jing (Cordyceps of the Mountains): 10 g
- Black beans: 40 g (about 2 heaping tablespoons)
- Free-range chicken or lamb (shoulder or neck): 300–400 g (boneless, cut into pieces)
- Fresh ginger: 3–4 thin slices (about 10 g)
- Goji berries (optional): 10 g
- Unrefined salt: to taste
- Filtered water: 1.5 to 2 liters
Preparation:
- Rinse the black beans and soak them 2–3 hours in advance (or overnight).
- Quickly blanch the meat in boiling water to remove impurities.
- In a large pot, add all ingredients along with cold water.
- Bring to a boil, then reduce to low heat.
- Simmer for 1 hour, covered.
- Season to taste and serve hot.
