Jujube Cake – Comforting and Energizing Treat
A soft, moist cake that combines the sweet richness of jujube fruits with the warmth of black sesame seeds. Perfect for a nourishing snack break.
Ingredients:
- Jujube fruits: 100 g (pitted)
- Brown sugar: 90 g
- Low-gluten flour: 40 g
- Eggs: 4
- Salt: 1 g
- Baking powder: 3 g
- Corn oil: 50 g
- Black sesame seeds: a handful for topping
Preparation:
- Simmer the jujubes with a cup of water until the liquid evaporates. Add brown sugar and mix well.
- Add the eggs and salt, then beat until a thick foam forms.
- Add the corn oil, then sift in the flour and baking powder. Mix thoroughly.
- Pour into a mold and sprinkle with black sesame seeds.
- Bake at 160°C (320°F) for 35 minutes. Enjoy!
